Mince pies are now possibly my favourite festive food,I actually use to hate though,but I would make them every year and I must say I think that I have actually grown to love them! Yesterday me and my mum decided to make quite a big batch of 16 mince pies for our christmas party,below is the super easy and quick recipe that we used.

A bit of a random note,but can I just say how cute the butter packaging is!

To make 16 mince pies you will need:

680 g Plain Flour

400g cold unsalted butter

4 tbsps caster sugar

5 large egg yolks (make sure you keep one for brushing on the tops)

1 pinch of salt

About 1 and a half jars of mincemeat

To make:

Preheat the oven to 175oc

Sift together the flour and salt into a bowl.Using your fingertips, rub in the cold butter until you have a breadcrumb like mixture.Stir in the sugar and four of the egg yolks,and add the water,a tablespoon at a time until the mixture comes together to make a dough.Press the dough into a ball,and cover to chill for 10 minutes.

Then roll out onto a clean surface,dusted with flour.Using a rolling pin,gently roll the ball of dough out until it is about a 1cm thick.Using a round cutter,cut out circles to fit into the muffin tin.Grease your muffin tin with butter before gently pushing the circles in.Add a teaspoon (or more) full of mincemeat into each mince pie.With the remaining rolled out dough,use a star shape cutter (if you don't have one just cut out little star shapes) to cut out stars and pop onto the top of the pies.Brush over the top with the remaining egg yolk.Bake for 15-30 minutes until glossy and golden brown and enjoy!
